Coq au Riesling — a delicious Alsatian take on coq au vin, where chicken is braised in white Riesling wine with mushrooms and bacon. It’s rich but lighter than the red wine version.

Ingredients: free-range chicken thighs, artisanal butter, onions, leeks, crimini mushrooms, chicken stock, Riesling, fresh parsley and tarragon, salt, and pepper.  

This is great served with Mashed Potatoes or buttered noodles.
