Persian Beef and Rhubarb Braise with Saffron Rice

This is a traditional Persian dish. We have altered the recipe using our sous vide technique to tenderize the beef and compress the rhubarb eliminating that stringy quality. I love this dish as it have two bunches of fresh parsley and mint and is finished with a rosewater saffron mixture. We have teamed it up with saffron rice to make a complete meal.

Ingredients: beef blade, beef bone broth, fresh herbs, turmeric, rhubarb, onions, basmati rice, saffron, rosewater, butter, olive oil, salt and pepper to taste
